For me, barquillos is best when garnished in a sorbetes (Kapampangan ice cream). YUM! YUM! YUM! this delicacy is made of  rice flour, egg yolk, sugar, carabao’s milk, and water mixed together. The batter is flatten in an iron and is rolled using a clean wooden stick. I had a chance to watch how it was done and how they multi task is unbelievable.  The owner of this business is May Mercado. Her grandmother Adela Galang bequeathed this business to her. Her grandfather also invented the barquillera.
